This is one of those weeks.
And in case you want to eat along with me, and because a lot of these recipes are others' recipes I'm trying and can link to, I thought I'd share a week of meals with you. Actually six days, but you can take that seventh night off from cooking and go out somewhere :)
Night One
Roasted asparagus with olive oil, garlic, salt, and pepper
Cantaloupe gazpacho
Night Two
Branzino with tomato jam
Crusty bread with garlic, smashed avocado, heirloom tomatoes, salt, and pepper
Swiss chard sauteed with olive oil, garlic, and salt, topped with toasted pine nuts
Night Three
Grilled eggplant with yogurt sauce and naan
Fresh cucumber and heirloom tomato salad
Night Four
Crispy roasted potatoes
Beet salad with fresh mozzarella and poppy seed dressing
Garden salad
Night Six
BLT with avocado
Sweet potato fries (Alexi frozen)
And a few extra treats I'm making this week and will share recipes for soon:
- Coconut and seed granola
- Watermelon, feta, and quinoa salad
- Fresh mint chocolate chip ice cream
- Healthy "milkshakes"

Yum. We kind of take a break from weekly meals plans during the summer since we have no set schedule, but I do miss it! Will have to try some of these.
